OUR HONEY
Beedens Brook harvests honey crops in both the spring and fall. These seasonal honeys tend to vary each year based on the available forage, creating subtle variations in flavor.
We also create raw honey blends sourced from other regional apiaries in New Jersey and Pennsylvania. These honeys–many drawn from individual floral sources like goldenrod, clover, and alfalfa–are combined with our crops to produce small-batch blends that are crafted to be more consistent in flavor. We always mix the honey by hand and never heat blends above hive temperatures (90˚-95˚F).

SEASONAL HONEY
SOMERSET SPRING
Somerset Spring is usually harvested in late June and captures both spring wildflowers and blossoms from apple, cherry, and pear trees. Early season crop blooms from peas, beans, cucumbers and alfalfa may also be represented. Although its character varies slightly each year, our spring honey usually has a light, golden color, is very sweet, and offers both floral and fruity overtones.
Hillsborough Harvest
Hillsborough Harvest is collected by early October, and so is laced with summer and fall crops like melons, squash, and pumpkin. Deeper and rounder in flavor than the spring crop, our autumn honey takes additional body from clover, as well as from goldenrod and aster flowers, which bloom profusely in Somerset County during this time of year.
RAW BLENDED HONEY
Tea & Table Blend
Tea & Table Blend is our signature blended honey, combining three different varietals with a splash of our Somerset Spring. This honey is dark and rich, with caramel overtones and subtle spicy note. It is the perfect honey to offer with black tea and cream, and provides a satisfying counterpoint when used as a dip for crusty herbed breads.
